Avocado Mayo

{ Makes 2 Cups }

“Hold the mayo?” No way! You can’t have a burger without the works! Believe me, by eating raw, I don’t want for anything. I can have the works anytime I like, and so can you. Chose between two different kinds of

  • 1 cup raw pine nuts
  • 1 large ripe avocado, putted and peeled
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons raw apple cider vinegar
  • 1 teaspoon Himalayan salt
  • 3 medium pitted dates (optional)
  1. Soak the pine nuts in purified water for 6+ hours. When the pine nuts have finished soaking, you will notice they have gotten plump with water and are soft to the touch.
  2. Drain and rinse the pine nuts.
  3. Chop the pine nuts in the food processor.
  4. Add the avocado, lemon juice, apple cider vinegar, salt and dates.
  5. Process the ingredients together until creamy.
  6. Use the mayo as a decadent spread for raw burgers and store the remainder in a VacSy container in the fridge (should keep for 4-5 days).
