Goin' on a Date Rolls

{makes about 16 rolls}

This is one of the easiest raw treats you can make, and these rolls are very satisfying whenever you’re looking for something a little sweet. They freeze well, so you can make a big batch and always have some on hand to toss into your lunchbox, backpack or purse.

Soaking the dates in water for an hour before processing makes for moist and light date rolls; skip the soaking for dense, firm, fudge-like rolls.

  • 1 pound Medjool dates (about 4 cups), halved, pitted, and soaked for 1 hour (soaking optional)
  • 1 cup dried shredded coconut, plus more for rolling
  1. In a food processor, combine the dates and coconut and process until a paste is formed.
  2. Scrape down the sides of the machine a couple times.
  3. Roll the mixture into 2-inch logs, and roll on coconut.

Date Water Tip

When you soak your dates, save the soaking water and use it to sweeten your smoothies or drink it as is in place of fruit juice.

Variations

  1. Chocolate Date Rolls: Add 2 tablespoons raw cacao powder before processing.
  2. Almond Date Rolls: Add ¼ teaspoon alcohol-free almond extract before processing and press an almond half into each roll after tossing them in coconut.
