I have read so many different and diverse theories on water, that my head is spinning! Yet I find that water is one of the most important tools we have to help keep us healthy. Many of the people I speak to are also confused at what is the best water to drink. There are hundreds of systems available and arguments for every one of them. The more I researchedthe more confusing it became to decide which system is the best. Recently, I was at the Truth About Cancer Conference in Dallas, Texas and I was introduced to Echo Water! This was the first time I had heard about Echo Water, so I was very curious to understand the theory behind it.
I had heard of alkaline water, and in fact had read Sang Whang's book on anti-aging and the benefits of alkaline water, but I hadn't heard of hydrogen enriched water.
So I started thinking-isn't water made up of hydrogen? So why do I need to add more of it? What benefits do I get from hydrogen enriched water?
We all know that water's molecular structure (H2O) is formed by the combination of 2 gases- hydrogen and oxygen. But did you know that each of these gases perform a specific function? Oxygen is an oxidizer and hydrogen is a reducer and once you combine them, it is now a liquid -hence "water" the key to life. Without it you die. You cannot do a fast and stop drinking water-but you can fast off of food. So this makes water more immediately important than even food.
So how is it possible to make water better? Or more specifically, better for you?
I guess it all starts with what an oxidant is because Oxygen (O2) is a well-known oxidant. In chemistry an oxidizing agent (oxidant, oxidizer) is a substance that has the ability to oxidize other substances (cause them to lose electrons). When these other substances lose electrons, they become unstable. That is why we care so much about antioxidants! We care about them in our food to help counteract oxidation and we care about it in our skin care even. But what about our water? What if we can get our water to become our best antioxidant ever? It's something we need to do anyway, and we do all the time - Hydrogen is amazing! It was involved in the genesis of life and oxygen, even though it's an accident, it is still necessary for the existence of life. We breathe in oxygen (an oxidizer) all the time- pushing our bodies towards oxidation. So wouldn't consuming hydrogen be the perfect and natural way to balance the oxidation from oxygen?

- Why is H2 Important?
The H2 molecule, unlike other antioxidants, is a selective antioxidant that only targets the damaging free radicals like hydroxyl radicals (HO*), converting them to water. It can also prevent oxidative stress by increasing the body's own antioxidants such as glutathione. It also has beneficial cell signaling properties. The hydroxide (OH-) ions are responsible for the alkaline pH, but they are not antioxidants themselves. Finally, in 2007, it was clearly shown that molecular hydrogen is what caused the benefits in the water. H2 gas can act as a selective antioxidant and is responsible for the therapeutic properties observed with alkaline or ionized water. No one had investigated hydrogen gas before: everyone assumed it was just an inert byproduct of electrolysis - with no biological effect. If we remove hydrogen gas from ionized water the therapeutic effects are lost. When we add additional hydrogen gas to ionized water (e.g. via bubbling) the positive benefits, in many cases, are increased.
- How Does Electrolysis Create Hydrogen?
Electrolysis of water has been used for decades to produce hydrogen gas. It converts water (H2O) to hydrogen gas (H2) and hydroxide ions (OH-) at the negative side (cathode), and oxygen gas (O2) and hydrogen ions (H+) at the positive side (anode). Water electrolysis machines have a membrane that separates the alkaline OH- ions from the acidic H+ ions. The outlet from one side of the membrane gives alkaline water, which contains dissolved hydrogen gas (H2), and the other side of the membrane gives acidic water, containing dissolved oxygen gas (O2).
