Prune and Chia Porridge

{ serves 2 to 3 }

Yes, it’s those chia seeds, of Chia Pet fame. They may be good for a bit of fun, but the amount of nutrition that’s packed into each seed is no joke! They are an excellent source of calcium, iron, protein, fiber, and omega-3 fatty acids, among other nutrients. A superfood that will make you feel like a supermodel!

And chia seeds are wonderfully versatile: When you add water to them, they swell up and thicken, making them the perfect ingredient to use in raw puddings and porridge, like this rich, nutty tasting breakfast treat. Or add a spoonful to your smoothie to thicken it, use as a topping for Raw Granola or Pass the Buck Cereal, or sprinkle over Just Bananas Pancakes.

  • ¼ to ½ cup pitted prunes;
  • 1 to 2 tablespoons raw honey, raw agave nectar, coconut nectar or rapadura
  •  ½ cup raw almonds, cashews, soaked or raw macadamia nuts soaked in water to cover for 1 hour
  • 1 teaspoon alcohol-free vanilla extract, or ¼ teaspoon alcohol free almond extract
  • Dash of sea salt
  • ½ cup chia seeds

Variation: Prune and cardamon chia porridge: Substitute ¼ teaspoon ground cardamon for the vanilla.

  1. In a blender, blend 2 cups water with all the ingredients except the chia seeds.
  2. Place the chia seeds in a bowl or container, pour the prune mixture over them, and mix well to coat all the seeds.
  3. Cover and refrigerate for at least 30 minutes to soften.

Timesaver: Make the cereal the night before and you’ll have no morning prep.

Almost instant Chia Porridge

Follow this simple formula for a version of chia porridge that can be put together in minutes: For one serving, combine ¼ cup chia seeds and 1 cup water, stir, set aside for 30 minutes, then add your choice of milk, fruit and/or raw sweetener.
