"So summer is ? over and the time is still right for dancing in the streets!"
Well not so much dancing in the streets - but certainly it's still party time! There is still time to have picnics and barbecues, outdoor movie nights and pool parties. Now for many people, they try to lose the weight before summer so they can wear their bathing suits - but summer is the perfect time to slow down on eating. First of all, it's really hot - who wants to be working in the kitchen and cooking up a storm?
So I am here to help with a couple things that might be refreshing; meals that you can whip together in a matter of seconds.
How about a Watermelon Salad?
Cut chunks of watermelon, add chunks of feta cheese, mix everything together in a big bowl, and then add salt and pepper. (And of course when I say salt, I do mean Celtic sea salt or Himalayan sea salt.) Then sprinkle with a touch of cold-pressed olive oil.
What can be better than that?
Well, let me answer that right away: how about a Zesty Lemonade?
Squeeze three lemons into a pitcher, add a can of seltzer, a bottle of fizzy water, or any naturally effervescent water, garnish with a mint sprig, and if your lemons are really sour add a little bit of raw honey! Yum!!
Need something heartier? You could do a fabulous Cold Soup.
Here is my 7th Heaven Soup: or should we say it's a "summer soup," the version where you don't have to work very hard or slave over a hot stove to have a fabulous outcome!
Start with:
cup sesame seeds - Grind up sesame seeds in a spice grinder til you have a sesame seed "meal."
Then chop the following and feed them slowly into the blender until you have a soup like consistency:
One red bell pepper
One cucumber (not peeled)
Two celery sticks
One medium tomato
One apple (without core)
One knob of ginger (peeled)
3 garlic cloves (peeled)
2 sprigs of fresh cilantro
cup freshly squeezed lemon juice
2 cups of distilled water
cup Braggs liquid aminos
cup olive oil
cup chopped onion
Add the sesame seed meal.
What I'm trying to show you is that you don't have to slave over a hot stove to get healthy, fun, summertime meals that are easy to make and good for the family.
