Gazpacho

Good news: Gazpacho is a really easy cold soup to turn raw. The following is a typical ingredients list for a partially raw gazpacho. Question: Can you guess which ingredients might be cooked?*

Ingredients:

2 large tomatoes, seeded and finely chopped

1 small cucumber, peeled, seeded, and finely chopped

½ medium red onion, finely chopped

1 small red bell pepper, cored, seeded, and finely chopped

1 garlic clove, pressed through a garlic press

1 tablespoon raw apple cider vinegar, or to taste

1 tablespoon fresh lime juice, or to taste

1 tablespoon cold-pressed extra-virgin olive oil

Sea salt

1 ½ cups freshly pressed tomato juice

½ cup chopped fresh cilantro

Partially Raw Gazpacho

Fresh tomatoes

Cucumber

Red onion

Red bell pepper

Garlic

Red wine vinegar

Fresh lime juice

Olive oil (not cold-pressed)

Fresh cilantro

Bottled tomato juice

Table salt

Now let's turn those ingredients around to turn our gazpacho completely raw.

Totally Raw Gazpacho

{Serves 4}

In a large bowl, combine the tomatoes, cucumber, onion, bell pepper, garlic, vinegar, lime juice, oil, and salt to taste.

Transfer half of the vegetable mixture to a food processor or blender, add the tomato juice, and pulse to a chunky puree.

Return the puree to the bowl and stir it into the vegetables. Taste and adjust the seasonings, adding more vinegar, lime juice, or salt if needed.

Cover and refrigerate for at least 1 hour, until cold. Stir in the cilantro before serving.

*Answer: The cooked ingredients are red wine vinegar, olive oil, bottles tomato juice, and table salt.
