Easy Raw Snacks and Lunches

By Carol Alt / Post / July 17, 2017

When I think back to when I first wrote my book, Eating in the Raw, I remember people used to ask me what I ate. For some reason they always came up with carrots, saying things like “What do you eat? Carrots?” I don’t know why that always shocked me, but it always did. Why carrots? I mean I do eat carrots but it’s nothing special, like in my salad, or in bran carrot bread. I even juice them sometimes.

Years passed and people got more used to hearing about raw food and diets (other than the Standard American Diet, or SAD), yet people still doubt themselves or their ability to stick with it. “I’m not disciplined. How are you so disciplined? What can I eat?” I understand those questions because when I first started eating raw I narrowed myself down to eating just raw vegetables. To tell you, it was really boring. I called my doctor and said, “I cannot do this anymore.” Then he explained to me all the raw, the amazing, amazing raw, that is out in the world and my whole life changed.

I mean it changed when he taught me about raw, But then it really changed me when he taught me WHAT was raw. There was tartare, bresaola, prosciutto, raw milk cheeses, ceviche. That’s not even mentioning the really awesome vegan stuff that you could find at a restaurant like stuffed zucchini flowers and lasagna and lava cake. And yes, I AM trying to get your mouth watering! Today I decided to put together a little list of a few things that you could take to the office in your purse or even just a brown paper bag.

These are great if you want to snack in front of the TV and you I need something that’s healthy yet delicious. Of course my books have way more things in it, but this can get you going:

  • Raw almond butter with banana or apple
  • Pear with Romano Parmesan cheese
  • Other fruits with raw milk cheeses like Manchego or Emmenthaler (available at Whole Foods or an International Cheese Shop)
  • Avocado: remove the pit, score it, add sesame seeds, Celtic sea salt, with CP olive oil or any other raw dressing. Put the two halves back together and wrap in Saran Wrap.
  • Trail mix with raisins or cranberries and chopped chunks of Date and Nut or cinnamon and raisin Manna Bread. (manna bread is also available at whole foods or your local health food store in the refrigerated section)
  • Make your own kefir (easier then yoghurt) with yogourmet mix (found in Whole Foods or online) add GoRaw granola (there are several kinds of raw granola on the market. GoRaw has several different kinds just under that name brand. They have regular, chocolate, cinnamon, etc.)
  • Multi-grain Manna bread (Found in Whole Foods or health food stores in the refrigerated section) and raw almond butter
  • Request your library to bring in my books to help you learn to eat healthier! Find raw recipes, understand why raw foods are more nutritious for you and to learn other protocols not mentioned in my blogs.
